Berry Light & Tasty Mix

A healthy mix of nuts, seeds and berries. Simple to make and delicious to eat.

Add this good food mix to cereals, porridge, fruit salad, yoghurt, ice cream.

Enjoy for breakfast, brunch or a light snack.

Measure and store in a glass jar for long lasting freshness, consume within 3-4 weeks.


Berry Light and Tasty mix served with summer fruits and coconut yoghurt with a drizzle of passionfruit.


RECIPE

12g or 1/2 cup puffed millet

8g or 1/3 cup puffed amaranth

40g or 1/2 cup flaked almonds

20g or 1/4 cup goji berries

20g or 1/2 cup flaked coconut

33g or 1/4 cup pepitas

33g or 1/4 cup buckinis

37g or 1/4 cup sunflower seeds

34g or 1/4 cup cacao nibs


METHOD

*Measure out ingredients and add to a mixing bowl.

*Mix thoroughly and store in a glass jar for long lasting freshness.


STRAWBERRY COULIS

3/4 cup of frozen strawberries, thawed at room temperature (or use fresh)

1 teaspoon of sweetening of choice (optional)

1/2 teaspoon thickening agent (cornflour, arrowroot)



METHOD

*Press thawed strawberries through a puree sieve such as a mouli.

*Place pureed strawberry in a small pot with sweetening and heat to a simmer.

*Mix the cornflour with a little water to form a thin paste.

*Add to the strawberry puree and stir for a minute.

*Remove from heat and cool.

*Store any leftover in the fridge.
