Do you ever get stuck with what to cook for dinner. This recipe was one of those times. Sometimes the tastiest and most delicious food is created purely by accident. Time was moving on and dinner needed to be made, What was I going to make?
Veggie bites came together with a rich gravy and a meal was ready.
EQUIPMENT Food processor, shallow baking pan, small saucepan
The recipe calls for left over rice and pasta. You may use just rice or just pasta. I had some of each that needed to be used .
RECIPE makes 20
1 cup cooked left over rice
1 cup cooked pasta
1 medium sized brown onion, finely chopped
4 large cloves garlic minced
2/3 cup Italian parsley or coriander finely chopped
1/2 cup yeast flakes
1/4 cup dry bread crumbs or (panko bread crumbs)
1/4 cup almonds
1/4 cup rolled oats
1/4 cup hemp seed
1/4 cup pepitas
1/4 cup dukkah spice mix (optional)
1 tablespoon phylum husk
1 heaped teaspoon curry powder
1 teaspoon vegeta (vegetable seasoning)
2 tablespoon liquid seasoning
1 teaspoon onion powder
2 teaspoon garlic powder
METHOD
*Add the first two ingredients to a food processor and pulse a couple of times to break up the grain and pasta. Empty into a large mixing bowl.
*To the bowl add finely chopped onion, mined garlic and finely chopped parsley.
*Next add almonds, rolled oats, hemp seeds and pepitas to a food processor and process to form a mixture like fine bread crumbs then add to the mixing bowl.
*Add the remainder of ingredients and mix together.
*Take a tablespoon of mixture and with your hands shape into bite size balls.
*Place them in an oiled dish and place in the oven at 180 degrees Celsius or
375 degrees Fahrenheit. Bake 20 minutes then turn over and bake another 15 minutes.
*Remove from the oven and cover with foil to keep warm.
GRAVY GLAZE
2 cups vegetable broth or (filtered water)
2 teaspoons dark soy sauce
1/2 teaspoon mild tasting honey (optional)
1 1/2 teaspoon sirarchi sauce (optional)
1/4 - 1/2 massel chicken like cube
1 heaped teaspoon cornflour mixed to a paste with a little water
METHOD
*Place the first four ingredients in a small saucepan and bring to a simmer on medium heat.
*Mix cornflour with a little water to form a paste. Once the liquid starts to simmer add the paste, stirring constantly to prevent lumps.
*Reduce heat and let the gravy simmer for a couple of minutes.
*Add more flavouring if needed depending on your taste.
*Remove gravy from heat it will continue to thicken as it cools.
*Serve over veggie bites and enjoy.
