Golden Chickpea Patties with Caramelised Onion

This is one of my all time favourite patty recipes that I keep coming back to. I like that the ingredients are few in number and readily available from any supermarket. These patties have a great flavour and texture. Cooking time is only 20 minutes. I usually make a double batch and freeze some for future meals.

Serve with the caramelised onion, they are delicious. You may also like to place your patty in a burger bun with toppings and condiments or serve drizzled with a rich gravy and your favourite side vegetables.


EQUIPMENT A food processor, nonstick fry pan.


Makes 8-10 patties RECIPE 400g cooked chickpeas drained of water 1 cup rolled oats 1 large onion finely chopped 1 tablespoon light soy sauce 1 heaped teaspoon garlic powder 1/2 teaspoon vegetable stock powder (vegetta) COATING FOR PATTIES 3 tablespoons each of plain flour and nutritional yeast flakes (mix together) METHOD Blend rolled oats in a food processor, place in a mixing bowl. Place chickpeas in a food processor and pulse until a smooth consistency, add to bowl. Add rest of ingredients and combine together. Mixture should be firm and just moist. Take heaped tablespoons of mixture and form into patties with your hands. Dust patties with coating mix, shake off any excess flour. Place patties in a non stick pan with a little oil, cook on medium to low heat for ten minutes each side, cover with a lid while cooking. Remove patties when cooked and keep warm until ready to serve.

CARAMELISED ONION 2 large onions peeled and thinly sliced 2 tablespoons of oil or as needed

METHOD Heat oil in a non stick pan add sliced onions. Toss the onions in oil and cook on high heat for 2 minutes. Reduce heat to low and cook onions slowly. Cook 20 - 30 minutes, stirring occasionally. At the end of cooking time, onions should be sweetly caramelised and golden in colour. SERVING SUGGESTIONS Place warm patties on a plate top with caramelised onion and drizzle with a rich tasting gravy, serve with roast vegetables and side salad. Place a spread of chilli sauce onto the base of a burger bun, add the patty, caramelised onion, sliced tomato, slice of cucumber, sliced non dairy cheese, add a dollop of vegan mayo, cover with burger bun top. Serve with a fresh garden salad. YUM
