OYSTER MUSHROOM SKEWERS

These oyster mushroom skewers are a perfect addition to your meal.

You will love how this recipe is so simple and easy, all that is required is fresh mushrooms and a marinade which comes together in no time. The taste is delicious the texture soft and slightly chewy.

Oyster mushrooms have a light delicate flavour if left plain, but when you marinate this mushroom it soaks up all the flavours. For this recipe the mushroom is pan fried, the same can be baked or grilled.

Serve with freshly made pita bread (learn how to make pillowy soft pita) and brown rice salad.


Tear up the mushrooms into chunks, add to prepared marinade, toss to coat and leave for 30 minutes.

Thread the marinated mushroom on to skewers and fire up the heat. Once your pan is hot add a dash of oil and vegan butter then add the skewers turn heat down to medium. Regularly turn the skewers you want the mushrooms to cook golden and caramelise.


EQUIPMENT 1 frypan, 1 large size mixing bowl, 1 serving plate


PREPARE SKEWERS

Cover 6 wooden skewers with boiling water and let them soak for 30 minutes.

This helps prevent skewers from burning when they are placed in the pan or on a hot girdle.


RECIPE

Makes 6 skewers

400g oyster mushrooms (tear into chunks)


FOR COOKING

1 tablespoon light tasting oil

1 tablespoon vegan butter (optional)


MARINADE

2 large garlic cloves, finely minced

4 tablespoon light soy sauce

3 tablespoon light tasting oil

1 tablespoon sriracha sauce

2 teaspoon paprika

2 teaspoon maple syrup (or your choice of sweetener)

2 teaspoon miso paste

2 teaspoon red pepper powder (Gochugaru same powder used to make kimchi) optional

1/2 teaspoon turmeric (optional)


METHOD

*Mix all the marinade ingredients together.

*In a large mixing bowl add the marinade then add the oyster mushroom chunks and toss to coat.

*Let the mushroom marinate for at least 30 minutes.


*Take a skewer and thread with the marinated mushroom

*Continue until the mushroom is threaded on the skewers

*Take a fry pan and heat on stove top, when hot add light tasting oil and a knob of butter swirl around the pan. Keep heat to medium.

*Add skewers and watch them, turning frequently to get even cooking and prevent them getting over done. The mushroom should remain juicy and develop a golden caramelised appearance.

* Cooking time should only take 5-10 minutes.


*Once the mushroom skewers are done remove from the pan.

*While nice and hot serve as a side to the rest of your meal.
