MARINATED PICKLED ONION

Do you want to add more zest and punch to complement your food.

Try this marinated/pickled onion, not only is it a beautiful colour but also has a great taste of salty, sour and sweet.

Spruce up a salad, layer it in a vegetable burger and sandwiches or wraps, add to dressings, guacamole or other dips.

Very versatile. Made in minutes. Easy to prepare.

Will keep in the fridge for 3-4 weeks


You will need a sterilized jar with a screw top lid. INGREDIENTS 2 large red/purple onion 2 level tablespoon raw sugar or sweetener of choice 1 teaspoon pink sea salt or salt of choice ½ cup apple cider or white vinegar 2 cups water METHOD

*Peel and slice red/purple onions into thin rings, add to sterilized jar. *To make the brine, put remainder of ingredients in a small saucepan and bring to a simmer to dissolve sugar and salt, remove from heat and cool. *Pour the brine over the onion to completely submerge the onion, place lid on and place in the fridge. *Allow to marinate for a few hours before using.
